Crème Caramel
Ingredients:
1 cup granulated sugar
1/4 cup water
1/8 tsp cream of tartar
5 large eggs
2 cups milk
1 tsp vanilla extract
Instructions:
1 . Preheat your oven to 350°F (175°C) and place a baking dish filled with hot water into the oven to create a water bath for the custard.
In a heavy-bottomed saucepan, mix together the sugar, water and cream of tartar over medium heat until the sugar dissolves.
Increase the heat to high and bring the mixture to a boil, swirling the pan occasionally until it turns a golden brown color.
Pour the caramel into ramekins, tilting them to coat the bottom and sides of the dish evenly. Allow the caramel to cool and harden.
In a mixing bowl, whisk together the eggs, milk, and vanilla extract until thoroughly combined.
Pour the egg mixture into the ramekins with the hardened caramel.
Place the ramekins in the water bath and bake for 45-50 minutes or until custard is set and a knife inserted in the middle comes out clean.
Remove the ramekins from the oven, allow them to cool for a few minutes, then cover them with plastic wrap and refrigerate for at least 2 hours before serving.
When ready to serve, run a knife around the edge of the ramekin to loosen the custard, then invert the ramekins onto a plate to release the custard onto the plate. Spoon over any remaining caramel sauce from the ramekins.
