Tteokbokki
Tteokbokki (also known as Dukbokki), a popular Korean dish made with spicy rice cakes, here's a simple recipe:
Ingredients:
1 pound cylindrical rice cakes , cut into 2-inch pieces
4 cups water
2 tablespoons gochujang (Korean chili paste)
1 tablespoon gochugaru (Korean chili powder)
1 tablespoon sugar
1 tablespoon soy sauce
2 cloves garlic, minced
1 tablespoon vegetable oil
2 stalks scallion, chopped
Optional: boiled egg, fish cakes, or vegetables like cabbage, carrots, or bell peppers.
Instructions:
In a large pot, bring 4 cups of water to a boil. Add the rice cakes and boil for 3-4 minutes, or until the cakes are soft and chewy. Then drain and rinse the rice cakes under cold water.
In a mixing bowl, whisk together the gochujang, gochugaru, sugar, soy sauce, and minced garlic to make the sauce.
Heat a large skillet over medium-high heat and add vegetable oil. Once the oil is hot, add the rice cakes and stir-fry for 2-3 minutes or until it becomes slightly crispy.
Add the sauce to the skillet, tossing with the rice cakes until the sauce is evenly distributed. Reduce the heat to medium-low and stir-fry for 5-7 minutes or until the sauce thickens and the rice cakes are well coated with the sauce.
Serve hot, topped with chopped scallions or other optional ingredients like boiled eggs or vegetables.
