Japanese fluffy cake, also known as Japanese cotton cake or Japanese souffle cake, is a light and airy cake that is popular in Japan and around the world. Here is a recipe for making Japanese fluffy cake


Ingredients:

4 large eggs, separated

1/4 tsp cream of tartar

1/2 cup granulated sugar

1/2 cup cake flour

1/4 tsp salt

1/4 cup milk

1/4 cup unsalted butter, melted

1 tsp vanilla extract


Instructions:


Preheat your oven to 325°F (160°C). Line a 8-inch (20 cm) cake pan with parchment paper.


In a large mixing bowl, beat the egg whites and cream of tartar until stiff peaks form.


In another mixing bowl, whisk together the egg yolks and sugar until light and fluffy. Add in the cake flour, salt, milk, melted butter, and vanilla extract, and whisk until the batter is  smooth.


Gradually fold the egg white mixture into the batter, a third at a time, until fully incorporated.


Pour the batter into the prepared cake pan and smooth the top using a spatula.


Bake the cake for about 40-45 minutes until it is golden brown and a toothpick inserted into the center comes out clean.


Let the cake cool completely in the pan before removing it from the pan.


Slice and serve the Japanese fluffy cake with your favorite toppings, such as whipped cream and fresh fruit.
